Nancy Peterson Scharlach is the owner and Chief Technical Consultant for Peterson Food Safety, LLC. Nancy has a B.S. in Microbiology from the University of Montana in addition to over 15 years of diverse experience in the food industry. Nancy has built her knowledge working for prestigious companies, such as Schwann's, The Hain Celestial Group and Jamba Juice Company prior to starting Peterson Food Safety, LLC.
Nancy's wide range of experience and expertise in the food industry include' USDA and FDA RTE fresh and frozen meal and products, fresh cut produce, GAP's and fresh produce harvesting, fresh and frozen dairy manufacturing, retail QSR, IQF fruit and vegetables, bakery and snack products, sprouted seed products, pasteurized and unpasteurized concentrated and single strength juice products, thermally processed sauces, salsas and canned goods, pasta items and warehouse storage practices. Included in these experience is working globally with processors in countries such as Mexico, China, Chile, Argentina, Brazil, Peru, Ecuador, Guatemala and Canada.
Nancy has authored HACCP Plans and Quality and Food Safety Manuals for numerous employers and clients in addition to working with processors to integrate the best practices in the industry including customer requirements and passing third party audits. Nancy is also a registered Safe Quality Food (SQF) Consultant, HACCP certified and participates in continuing education courses and seminars to ensure the best developed food safety and quality plans are developed for clients.
